Pumpkin Pancakes with Date Caramel Sauce

Breaky magic here we come with our Pumpkin Pancakes and Date Caramel Sauce! These pancakes are like a warm, cozy hug and inspired by all the halloween pumpkin recipes!

Topped with a homemade caramel sauce made from dates – it's sweet, gooey, and absolutely divine.

Whether you're treating yourself on a lazy weekend or brightening up a weekday morning, my Pumpkin Pancakes are here to make your day a little sweeter and a whole lot more delicious.

 
 

Servings: 2

Ingredients

1 Free-Range Egg
1 Banana
¾ cup Unsweetened Plant-Based Milk (I used Soy Milk)
½ cup Rolled Oats
½ cup Mashed Pumpkin*
1 tsp Baking Powder

Toppings of your choice (I used pecans, cream, banana,
cinnamon)

Date Caramel Sauce
4 Medjool Dates, pitted & finely chopped
½ cup Coconut Cream
1-2 tbsp water
1 pinch Sea Salt

*steam or roast pumpkin and proceed to mash.

 
 

Method

  1. Pulse all ingredients in a blender until just combined.

  2. Heat a frying pan on a low heat and grease with oil or butter.

  3. Pour batter using a ¼ cup at a time onto frying pan.

  4. Flip once lightly browned on one side, due to the thickness these pancakes may take a longer time than usual to cook.

  5. Meanwhile, blitz all date caramel sauce ingredients in a blender (add one tablespoon of water at a time to assist blender in blitzing, you may not need a second tablespoon it will depend on the power of your blender and how much liquid was in your coconut cream). Once mixture is smooth place in the fridge until you are ready to serve to allow to thicken.

  6. Serve with your favourite toppings.
