Homemade Marshmallows

Indulge in a marshmallowy hug in a mug with my homemade Maple Syrup Marshmallows. These pillowy clouds of sweetness are a delightful twist on the classic treat and free of additives, artificial colours & nasties.

Crafted with love and maple syrup magic, these marshmallows are fluffy, gooey, and oh-so-delicious. They're actually SO easy to make and impossible to resist – whether perched on a steaming cup of hot choccy or savored straight from the batch.

Servings: 10-15 dependent on size

Ingredients

White
1/3 cup Water
1 tbsp Grass-Fed Gelatin Powder
1 cup Maple Syrup

Strawberry
1 cup Strawberries
¼ cup Water

 
 

Method

  1. Line two containers with baking paper and set aside.

  2. Using a food processor (I used my magimix with a whipping attachment or you could use hand beaters/electric mixer), place water and gelatin in the bowl and allow to sit and bloom.

  3. Pour maple syrup into a small saucepan and bring to a boil, stir, allow to foam for a minute and take off the heat (make sure you keep an eye on it as it can burn quickly!).

  4. Begin whipping bloomed gelatine and add maple syrup slowly to food processor and process/beat for 10 minutes until stiff peaks form (check between 8-12 minutes, I know it takes a while but it will get there!).

  5. Meanwhile, blitz strawberries and water in a blender until it’s a smooth liquid.

  6. Pour half the mixture into a lined container.

  7. Add the blitzed strawberries to the remaining mixture and whip for a further 3-5 minutes until stiff peaks are formed again.

  8. Place both containers in the fridge and allow to set for at least 4 hours. Cut into desired shapes and enjoy!
