Choc Battered Banana Pancakes

 

These mini banana pancakes are such a fun and delicious way to start the day!
The sweetness and caramelisation from the banana is seriously yummy, combined with beautiful cacao you are in for a treat!

This recipe was developed for Citron, as you can see their beautiful bamboo plate below.

Choc Battered Banana Pancakes

Servings: 2

Ingredients

¾ cup Buckwheat Flour
1 tbsp Tapioca Flour
1 tbsp Cacao Powder
2 tsp Coconut Sugar, optional 
1 tsp Baking Powder
¾ cup Unsweetened Plant-Based Milk (I used Almond Milk) 
1 Free-Range Egg, whisked
2 Bananas, sliced into coins 

Toppings of your choice: fruit, maple syrup, 
melted chocolate, coconut 

Method

1.     Sift buckwheat, tapioca flour, cacao powder, coconut sugar and baking powder in a large bowl. Stir to combine. 

2.     Add milk and egg to bowl, whisk to combine all ingredients. 

3.     Fold in banana.

4.     Drop small spoonful’s of bananas coasted in batter onto a greased frying pan on a low to medium heat. 

5.     Flip mini banana pancakes once small bubbles appear on the surface. Allow to cook the opposite side for a further 1-2 minutes or until lightly browned. 

6.     Once cooked, enjoy with your favourite toppings
