Strawberry Smoothie Cupcakes

Okay every now and then I have a recipe vision that
is bit odd but super delicious!

These are sooo simple and great snack/dessert on a summery day.
This is also a waste free hack for any smoothie flavour!

If you make a big batch of smoothie don’t pour the rest down the sink, simply place it in moulds and voila you have a quick frozen snack!

OR, simply chuck it back into the blender and add it to your next smoothie batch!

I have topped mine with whipped cream
but yoghurt goes down a treat too!

 
Strawberry Smoothie Cupcakes
 

Servings: 6-8

Ingredients

1 cup Unsweetened Plant Based Milk (I used coconut)
1 cup Strawberries
½ cup Macadamias
¼ cup Rolled Oats

Toppings, optional
Whipped Cream or
Yoghurt

 
Frozen Strawberry Smoothie Cupcakes
 

Method

1.     Add ingredients to blender. Blitz until smooth.

2.     Pour into silicone muffins moulds. Place in the freezer until slightly firm/frozen.

3.     Top with cream or yoghurt and enjoy!
