Spinach Crepes

Make your own SPINACH wraps!
It makes me so angry when I look in the wrap section at the supermarket, the ingredients are mostly rubbish.
You think you’re doing a good thing for your body, BUT, if you actually look at the ingredients…. that aint spinach! ⁠
Maybe 0.5 percent of spinach “flavour” & colours 102 & 133. ⁠
Fortunately, I have created this easy recipe, that uses REAL spinach, NO preservatives, unnatural flavours or colours. ⁠
They are so vibrant and actually taste delicious! If you are buying wraps, please read the ingredients list & compare brands, you will be amazed! ⁠

Spinach Crepes

Servings: 2 (6 crepes)

Ingredients

½ cup Quinoa Flour
¼ tsp Baking Powder
½ cup Unsweetened Almond Milk
2 tsp Lemon Juice
1 Free-Range Egg
2 cups Spinach
¼ tsp  Salt 

Crepe Fillings (use leftover veg) or I used:
2 small Tomatoes, diced
3 cups Spinach
4 Spring Onions, sliced
6 Mushrooms, halved & sliced
60g Goats Cheese
Salt & Pepper, to taste

Method

1.      Blend all crepe ingredients until combined. 

2.     Pour ¼ cup of the mixture onto a greased hot pan at a time.

3.     Flip once bubbles appear on top.

4.     Fill crepe with your preferred ingredients (I sautéed mine whilst cooking crepes).

5.     Roll crepe, top with leftover filling & sprinkle with goats cheese.
