Sirloin Steak with Pumpkin Seed Pesto and Charred Corn

Ingredients

Extra Virgin Olive Oil, drizzled
2 Sirloin Steaks
1 Corn Cob
Salt & Pepper, to taste

Pumpkin Seed Pesto
2 Garlic Cloves, minced
1 cup Fresh Basil
½ cup Pumpkin Seeds
½ cup Extra Virgin Olive Oil
¼ cup Parmesan Cheese, grated
¼ Lemon, juiced
Salt & Pepper, to taste

 
 

Method

1.     Blitz all pumpkin pesto ingredients in a blender until just combined. Season with salt and pepper. Set aside.

2.     Heat a grill/frying pan and drizzle with olive oil.

3.     Add corn, continually rotate and cook until tender/very lightly charred, this will take approximately 8-10 minutes. Cut kernels off cob and set aside.

4.     Add steak to grill pan and cook to your liking.

5.     Slice steak and serve topped with pesto and charred corn.
