XMAS Santa Hat Chocolate Muffins

Christmas is right around the corner and I thought I would share a super quick recipe with you that looks like you went to way more effort than you actually did! Love that!

These Gluten Free Chocolate Muffins feature seasonal strawberries not only for their sweet taste and nutritional benefits but also to replicate Santa Claus’s hat!
So cute! And SO easy!

Chocolate Santa Hat Muffins
 

Servings: 10 Muffins

Ingredients

2 cups Buckwheat Flour
½ cup Tapioca Flour
½ cup Sugar (I used rapadura)
¼ cup Cacao Powder
1 tsp Baking Powder
¼ tsp Bicarb Soda
¼ tsp Salt
2 Free-Range Eggs
½ cup Extra Virgin Olive Oil
1 cup Unsweetened Plant Based Milk (I used coconut)
1 tsp Vanilla Extract
10 Strawberries, tops cut off
½ cup Cream, whipped

 
Chocolate Christmas Santa Cupcakes
 

Method

1.     Preheat oven 180 degrees.

2.     Combine buckwheat flour, tapioca flour, sugar, cacao powder, baking powder, bicarb and salt in a bowl.

3.     In a separate bowl, whisk eggs, oil, milk and vanilla.

4.     Pour wet ingredients into dry and stir to combine.

5.     Divide mixture into a greased muffin tin. Bake for 20-25 minutes or until a skewer comes out clean.

6.     Whip cream until stiffened. Using a piping bag, pipe muffins with cream.

7.     Top with strawberry hats and a ball of cream on top of the tip of the strawberry.
