Prawn Rice Paper Rolls

These are so much fun to make!
The flavours are refreshing and delicious. Plus this peanut dipping sauce really takes it to the next level.

I love making these with friends, kiddies and my partner for a laugh. Also there’s a bit of competitive fun of who can roll the best. Haha.
It takes a little while to get the hang of. My tip would be to use a wet tea towel to keep the rice paper moist whilst filling and rolling.

Prawn Rice Paper Rolls

Servings: 2, makes 8 rolls

Ingredients

Rice Paper Rolls
8 Rice Paper (hint I used 16cm round)
16 small Prawns, cooked
1 cup Bean Sprouts
¼ Red Cabbage, finely shredded 
1 Carrot, julienned 

Peanut Sauce 
1/3 cup Peanut Butter
2 tbsp Tamari
1/3 cup Water
1 Garlic Clove, minced 
1 tsp Lemongrass, finely chopped 
Juice of ½ a Lime
½ a small Chilli, optional garnish  

Method

1.     Prepare rice paper as per packet instructions, placing all filling ingredients and rolling. 

2.     Blitz peanut sauce ingredients in a blender until combined. 

3.     Serve as a dipping sauce alongside rolls and garnish with chilli with desired.
