This is my new fave recipe hack!
This no fuss one pot lasagne bolognese is a game changer, simply add your lasagne pasta sheets to your bolognese sauce for a heart warming easy peasy recipe.

This recipe is in collaboration with Butcher Crowd
featuring their Grass-Fed Beef Mince.

Servings: 4

Ingredients

Extra Virgin Olive Oil, drizzled
1 Onion, diced
2 Garlic Cloves, minced
500g Grass-Fed Beef Mince
1 x 400ml jar Passata
3 cups Bone Broth (or vegetable stock)
1 cup Cherry Tomatoes (or chopped tomatoes)
1 tbsp Basil (I used Fresh & Dried)
1 tbsp Oregano (I used Fresh & Dried)
1 serving Beef Liver Powder, optional
½ tsp Salt
Pinch of Pepper
5 Lasagne Sheets
Fresh Parmesan, grated to serve
Baguette, optional to serve

Method

1.     Heat a large saucepan and drizzle with oil.

2.     Add onion and garlic to saucepan, cook until softened, approximately 2 minutes.

3.     Add mince and cook until browned, breaking up with a wooden spoon.

4.     Add passata, bone broth, basil, oregano, beef liver powder, salt and pepper to saucepan and allow to simmer for five minutes.

5.     Add lasagne sheets to the saucepan* place a lid on a bring to a boil.

6.     Remove lid and allow to simmer until lasagne has softened and sauce has reduced, approximately 15-20 minutes.

7.     Serve topped with fresh parmesan and a baguette to soak up the sauce.

* You can cook the lasagne sheets in a separate saucepan of boiling water if you prefer, as cooking them in the one pot will result in them breaking up into smaller pieces. Personally, I love the smaller broken pieces infused rustically with the sauce!
