Oat & Walnut Slice

 

This is officially a very serious contender for my new favourite dessert.
It uses very few ingredients, which is always a win and it just comes out so delicious. I put it down to the great texture that oat flour produces, if you are yet to try baking with oat flour then this a great one to start with!

Servings: 6

Ingredients

3 Free-Range Eggs
2 cups (200g) Walnuts 
1/3 cup GF Oat Flour
½ cup Rapadura Sugar

Topping
Your Favourite Ice Cream (vanilla bean is delicious!) 

Method

1.     Preheat oven to 180 degrees fan forced and prepare a 20 x 20cm baking tin.

2.     Blitz all ingredients in a blender until combined (the mixture will be thick, don’t over blend if you would like chunks of walnut for texture). 

3.     Spread mixture evenly into tin. 

4.     Bake for 15-18 minutes or until lightly browned and a skewer comes out clean.   

5.     Top with ice cream upon serving.
