Hazelnut Granola

I love baking a fresh tray of granola, smells like christmas! Stay away from store bought granola’s they are full of nasties & sugar!⁠
Why fill your body with that when you can make your own!
I love to have mine in the morning with some coconut yoghurt… droools!
But to be honest, I always end up nibbling from the jar through out the day, I just can’t resist.⁠

Hazelnut Granola

Servings: 8 - 400g. Serving size 50g (approx. ½ cup).

Ingredients

2 cups Coconut Flakes
1 cup Raw Hazelnuts, roughly chopped
¼ cup Pumpkin Seeds
¼ Sunflower Seeds 
2 tbsp Chia Seeds
1 tsp Cinnamon 
¼ cup Extra Virgin Coconut Oil, melted
2 tbsp Rice Malt Syrup


To Serve:
100g (or 1/3 cup) Unsweetened Coconut/Greek Yoghurt/Milk
Seasonal Fruit

Method

1.      Preheat oven to 180 degrees fan forced.

2.     Combine all ingredients in a bowl except coconut oil & rice malt syrup. 

3.     Seperately, Combine coconut oil & rice malt syrup, pour over dry ingredients whilst tossing.

4.     Spread evenly on a baking tray.

5.     Bake for 8 minutes, using a spatula toss granola. Bake for a further 2-4 minutes. 

6.     Once cool, store in a jar. 

7.     Serve with yoghurt/milk & fruit.
