Grass-Fed Steak with Sweet Potato & Mushroom Sauce

 

This mushroom sauce is sooo creamy and goes so well with steaks! Well mine does at least. 
The addition of the sweet potatoes chips takes steak & chips to a whole new level. ⁠

Grass-Fed Steak with Sweet Potato & Mushroom Sauce

Servings: 2

Ingredients

200g Sweet Potato, cut into wedges
1 tsp Extra Virgin Olive Oil 
250g Grass-Fed Eye Fillet Steak 
12 Beans

Mushroom Sauce
1 tsp Extra Virgin Olive Oil
½ Onion, sliced
1 Garlic Clove, minced 
4 cups Mushroom (medium sized)
½ cup Coconut Cream
1 tsp Tapioca 
Salt & Pepper, to taste 

Method

1.     Preheat oven 220 degrees fan forced and prepare a baking tray.

2.     Toss sweet potato in oil & season with salt. 

3.     Evenly spread on tray and bake for 15 – 20 minutes.

4.     Meanwhile, cook steak to your liking and once cooked set aside to rest. 

5.     To prepare mushroom sauce: Heat oil in a medium saucepan.

6.     Sauté onion & garlic until softened. 

7.     Add mushrooms & coconut cream and cook for a further 2 minutes.

8.     Meanwhile, steam the beans steam approximately 3 minutes.

9.     Add tapioca and seasonings to mushroom sauce and stir until thickens, approximately a further 2 minutes. 

10. Serve steak topped with mushroom sauce and sweet potato and beans.
