Coconut Matcha French Toast

So a few years ago I shared my Coconut French Toast, which was inspired from an amazing breakfast experience in Kyoto, Japan. They also had on the menu matcha French toast and I was literally obsessed. So I have finnaaally got around to creating and sharing this recipe with you! Matcha powder has beautiful antioxidant benefits and a fantastic way to start the day with its caffeine content.

 
Coconut Matcha French Toast
 

Servings: 1

Ingredients

1 (or 2) slice Bread (preferably good quality sourdough)
1 Free-Range Egg, whisked
1 tbsp Unsweetened Coconut Milk
2 tsp Desiccated Coconut
½ tsp Matcha Powder
¼ tsp Vanilla Extract
1 tsp Grass-Fed Butter

Topping Ideas:
Seasonal Fruit
Cinnamon
Maple Syrup

 
 

Method

  1.  Combine egg, milk, desiccated coconut, matcha powder and vanilla in a in a flat based bowl.

    2.     Soak bread in egg mixture for approximately 5 minutes, flipping to soak other side at the halfway point.

    3.     Melt butter in a small frying pan on a medium heat.

    4.     Gently place bread in pan and cook for 1 ½ minutes and flip for a further 1 ½ minutes or until browned.

    5.     Serve with your favourite toppings.
