Chocolate Chickpea Cookies

Ok, I know a lot of you LOVED my Chickpea Cookies and Chickpea Cookie Dough. Now I’ve taken those recipes to the next level!

Chocolate always makes everything better!

Who doesn't love healthy cookie with some hidden chickpeas in there. Try these ASAP, I promise you’ll love them!

Servings: 12

Ingredients

1 x 400g can Chickpeas, drained & rinsed (or 230g dried
chickpeas soaked & cooked)

¼ cup Peanut Butter

¼ cup Sweetener (eg. Rice Malt Syrup, Coconut/Rapadura Sugar, Maple, Honey)

3 tbsp Extra Virgin Coconut Oil (melted) or Olive Oil

1 ½ tbsp Cacao Powder

1 tsp Vanilla Extract

1 tsp Baking Powder 

¼ cup Organic Dark Choc Chips or Cacao Nibs

 
 

Method

  1. Preheat oven to 180 degrees conventional and prepare a baking tray.

  2. Blend all ingredients together, except chocolate chips.

  3. Fold in chocolate chips.

  4. Spoonful mixture on to baking tray (feel free to play around with size, I like tablespoon dollops & also smaller for bite sized cookies).

  5. Bake in oven for 10-12 mins.

  6. Allow to cool on tray for a further 5 mins (leaving them on the tray allows them to cook a little bit more but still remain gooey).
