Apple Crumble Cookies

So apparently it’s not just me that is apple crumble obsessed!
My Apple Crumble & Vanilla Protein Smoothie has been a popular hit on the website! Sooo I just had to turn them into a cookie version. Expect these cookies to be quite crumbly hence the ‘crumble’… so best to eat over a plate a lick up all those delicious crumbs! Enjoy!

 
Apple Crumble Cookies
 

Servings: 10

Ingredients

½ cup Grass-Fed Butter, softened
½ cup Coconut Sugar
1 Free-Range Egg
1 tsp Vanilla Extract
1 cup Flour (I used GF)
1 tsp Baking Powder
¼ tsp Bicarb Soda
¼ tsp Salt
¼ cup Rolled Oats
1 Green Apple, thinly diced

Topping
1 tbsp Grass-Fed Butter
2 tbsp Rolled Oats
2 tsp Coconut Sugar
Whipped Cream

 
 

Method

1.     Preheat oven to 180 degrees.

2.     Beat butter and coconut sugar in a stand mixer until combined. Add egg and vanilla until combined

3.     Add flour, baking powder, bicarb soda and salt. Use a spatula and beat/blitz until combined.

4.     Stir oats and apple throughout mixture.

5.     Using cookie sized dollops, add the mixture to a prepared baking tray.

6.     Bake for 12-15 minutes or until lightly golden. Set aside to cool.

7.     Meanwhile, melt butter on a frying pan on a low heat. Add oats and coconut sugar and cook until toasted golden.

8.     Dollop each cookie with whipped cream and sprinkle golden crumble on top.

9.     Enjoy these crumbly apple cookies!
