Choc Protein Breaky Clusters

Ok, who remembers growing up eating coco-pops as their go-to before school?

Well, I have recreated these choc protein breaky clusters which are basically the healthy version of coco-pops! AND you can make them yourself!!

Using Organic Artisan Cocoa Protein Powder, these clusters will transport you right back to your childhood!

 
Choc Protein Breaky Clusters
 

Servings: 8

Ingredients

8 Medjool Dates, pitted

1 ½ cups Sunflower Seeds

1 ½ cups Puffed Brown Rice 

½ cup Desiccated Coconut

1/3 cup Artisan Cacao Protein Powder

1/3 cup Walnuts 

¼ cup Cacao Powder 

¼ cup Extra Virgin Olive Oil

¼ cup Rice Malt Syrup 

2 tbsp Peanut Butter

Pinch Salt

To Serve:

Unsweetened Coconut/Greek Yoghurt/Milk

Seasonal Fruit

 
 

Method

  1. Preheat oven to 180 degrees. 

  2. Combine all ingredients in a bowl except olive oil, rice malt syrup and peanut butter. 

  3. In a separate bowl, combine olive oil, rice malt syrup and peanut butter. Add to dry ingredients and stir to combine. 

  4. Spread evenly on a baking tray.

  5. Bake for 12-15 minutes or until toasted.

  6. Allow to completely cool on tray. Break into large chunky clusters and jar. 

  7. Serve with yoghurt/milk and seasonal fruit.
