Chickpea Protein Balls

 

I am seriously chickpea obsessed!
I love being able to grab these on the go and I often have them after gym for a little post training snack & protein of course.

Chickpea Protein Balls

Servings: 25 small Balls

Ingredients

2 cups Chickpeas
¼ cup Peanut Butter
2 tsp Vanilla Extract 
¼ cup Rice Malt Syrup
2 tbsp Extra Virgin Coconut Oil
3 tbsp Protein Powder (I used vanilla)
1 tbsp Almond Flour
¼ cup Organic Dark Choc Chips or Cacao Nibs
Desiccated Coconut, optional

Method

1.     Blend all ingredients together, except choc chips. 

2.     Fold in choc chips.

3.     Roll into balls ( I did approximately 2cm in diameter) and roll through desiccated coconut. 

4.     Store in fridge.
