ANZAC Granola

Growing up my mum would always make anzac biscuits, they were absolutely delicious, chewy & everything. ⁠
So, I wanted to create something that would bring back that memory but I could also enjoy on a regular basis! So i came up with this ANZAC GRANOLA… and I’m actually quite obsessed!⁠

Anzac Granola

Servings: 8 - 400g. Serving size 50g (approx. ½ cup)

Ingredients

1 cup Rolled Oats
¾ cup Desiccated Coconut 
1/3 cup Coconut Flakes
¼ cup Almonds
¾ cup Almond Meal
¼ cup Sunflower Seeds
¼ cup Extra Virgin Coconut Oil
¼ cup Rice Malt Syrup 

 

To Serve:
100g (or 1/3 cup) Unsweetened Coconut/Greek Yoghurt/Milk
Seasonal Fruit

Homemade Anzac biscuit Granola

Method

1.     Preheat oven to 180 degrees fan forced.

2.     Combine all ingredients in a bowl except coconut oil & rice malt syrup. 

3.     Separately, combine coconut oil & rice malt syrup, pour over dry ingredients whilst tossing.

4.     Spread evenly on a baking tray.

5.     Bake for 5 minutes, using a spatula toss granola. Bake for a further 3-5 minutes or until toasted.

6.     Once cool, store in a jar. 

7.     Serve with yoghurt/milk & fruit.
