Chickpea Cookie Cake

 

One giant cookie coming right up, this one is
most definitely a delicious treat!
Grab a friend or a couple and enjoy!

Servings: 1 giant cookie to share!

Ingredients

1 tsp Extra Virgin Coconut Oil (for cooking)
1 x 400g can Chickpeas, drained & rinsed (or 230g dried 
chickpeas soaked & cooked)
¼ cup Peanut Butter
2 tsp Vanilla Extract 
¼ cup Rice Malt Syrup
2 tbsp Extra Virgin Coconut Oil
1 tsp Baking Powder 
¼ cup Organic Dark Choc Chips or Cacao Nibs


Method

1.     Preheat oven to 180 degrees.

2.     Blend all ingredients together, except choc chips.

3.     Fold in choc chips.

4.     Add mixture to a greased small frying pan. 

5.     Bake in oven for 10-12 mins.

6.     Serve & dig in!
