Whiting with Tomato Basil Risoni
This is one of those dinners that is full of flavour and can be ready in under 15 mins. A great way to make a fish dish a little more interesting, combining it with a light delicious pasta.

Ingredients
Extra Virgin Olive Oil, drizzled
2 Garlic Cloves, minced
250g Cherry Tomatoes, halved
½ cup Fresh Basil Leaves
¼ cup Bone Broth or Vegetable Stock
½ tsp Coconut Sugar
1 Lime, juice & zest
Salt & Pepper, to taste
1 cup Risoni Pasta
300g Wild Whiting Filets
Method
1. Cook risoni as per packet instructions, drain and rinse.
2. Heat a small saucepan and drizzle with oil, add garlic and cherry tomatoes and cook for 5 minutes. Add in basil, broth, coconut sugar, lime, salt and pepper. Allow to simmer for a few minutes whilst the risoni finishes cooking. Take off the heat and stir in risoni.
3. Meanwhile, heat a frying pan and drizzle with oil. Add whiting filets and cook until lightly golden/cooked through on each side.
4. Serve risoni topped with whiting.
