Raw Vanilla Bean Protein Cheesecakes

 

Vanilla Bean Protein and Cheesecake is a dream combo in my book!
This recipe is featuring pure vanilla bean whey protein from Aus Natural Protein Company.

Ditch store bought cheesecake and use delicious seasonal produce to whip up your own!
Plus making them mini is just extra cute, anyone with me!?

Raw Vanilla Bean Protein Cheesecakes

Servings: 10

Ingredients

Base
1 cup Walnuts
½ cup Desiccated Unsweetened Coconut
6 Medjool Dates, pitted & roughly chopped
2 tbsp Water
1 tsp Cinnamon
Pinch of Salt

 Filling
2 cups Macadamia Nuts
½ cup Pure Vanilla Bean Protein Powder
400ml Coconut Cream
¼ cup Extra Virgin Coconut Oil
¼ cup Maple Syrup

To serve:
Seasonal Fruit & Yoghurt/Cream

Method

  1. Blend all base ingredients until combined.

  2. Press evenly into muffins tins (silicone moulds work well)

  3. Freeze for 15 minutes.

  4. Blend all filling ingredients into a smooth consistency.

  5. Pour over base.

  6. Freeze until firm (approximately 2 hours).

  7. Remove at least 10 minutes prior to serving.

  8. Serve with seasonal fruit and a dollop of cream.
