Taco Bowl

 

I am such a mexican cuisine lover! Whipping up a quick and nourishing taco bowl
is SO simple and SO delicious. Trust me it will become a family staple.

Taco Bowl

Servings: 2

Ingredients

1 tsp Extra Virgin Olive Oil
1/2 Red Onion, sliced 
1 Garlic Clove, minced
250g Grass-Fed Beef Mince Meat
1 tsp Cumin
1 tsp Paprika
¼ tsp Cayenne Pepper
¼ tsp Salt
½ x 400g can Black Beans, drained & rinsed
1/3 cup Rice, cooked as per packet instructions
1/3 cup (or 125g can) Corn Kernels
1 Carrot, grated
½ Avocado, mashed
8 Corn Chips, optional
2 tbsp Coriander 

Salsa
1 Tomato, blitzed in blender  
¼ Red Onion, diced
¼ Red Capsicum, diced 
½ tsp Lime Juice 
Chilli, to taste (if you like it hot!)

Method

1.     Heat oil in a medium saucepan in  medium heat.

2.     Add onion and garlic and sauté until softened approximately 2 minutes. 

3.     Add in beef and sauté until beef is browned, approximately 4 minutes.

4.     Stir through spices and beans and taste to ensure spice is to your liking. 

5.     Combine all salsa ingredients in a small bowl and set aside. 

6.     Divide meat & rice between two bowls, continue to divide fillings (corn, carrot, avocado, corn chips, coriander). 

7.     Top with salsa and enjoy!
