Prawn Sushi Pockets

This is my new favourite lunch hack!
It takes me back to the rice pockets I enjoyed from the 7/11’s in Tokyo Japan!
Feel free to add your favourite toppings and enjoy this wholesome nutrient dense lunch.

Servings: 1

Ingredients

Seaweed Sheet
Tamari, for dipping

Toppings (feel free to get creative!)
Rice & Black Sesame Seeds
Avocado
Cucumber
Wild Caught Prawns

Mayonnaise, drizzled
Wasabi, optional

Method

1.     Cut a slit halfway up the seaweed sheet.

2.     Add toppings in each quadrant (I did rice & black sesame seeds, avocado, cucumber and prawns). Top with mayonnaise and wasabi.

3.     Fold the bottom left quadrant up towards the upper left quadrant. Proceed to fold to the right upper quadrant and then finally fold down to the lower right quadrant.

4.     Dip in tamari or your favourite sauce and enjoy!
