Single Serve Chocolate Cookie

Small Batch Cookies are seriously underrated, if you are craving a chocolate treat then this real food cookie recipe is for you!

This recipe is in collaboration with Ninja Kitchen and was baked in their Food Flip Air Fryer Oven!

I love it when cookies are slightly crisp on the outside yet super soft on the inside. These ones are crumbly soft yet with crispy edges!

Servings: 1 large (or two medium cookies)

Ingredients

1 Free-Range Egg
3 tbsp Flour (I used oat flour, simply blitz oats in a blender)
2 tbsp Grass-Fed Butter, softened
2 tbsp Coconut Sugar
1 tbsp Cacao Powder
1/8 Vanilla Extract
1/8 Bicarb
Pinch Salt
2 tbsp Chocolate Chips (I used White)

Method

1.     Preheat oven.

2.     Combine butter and sugar in a bowl.

3.     Add egg and vanilla to bowl and stir to combine.

4.     Add flour, cacao powder, bicarb and salt. Stir until combined.

5.     Fold through chocolate chips.

6.     Place (one or two) cookie batter on a lined baking tray.

7.     Bake for 8-10 minutes. Allow to rest for at least 5 minutes and enjoy!
