Quinoa Chicken Soup

 

Nourishing chicken soup with a twist!
I have included quinoa in this recipe for its fantastic nutritional profile. Quinoa is considered a superfood due to it being a complete protein source and it’s also very high in fibre! It adds bulk to this soup and makes it heartier, which is what our bodies naturally crave in the cooler months.

Quinoa Chicken Soup

Servings: 4-6

Ingredients

1 tsp Extra Virgin Olive Oil
1 Onion, diced
1 Garlic Clove, minced
1 cm Ginger, grated
1 Carrot, diced 
2 stalks Celery, diced
2 litres Bone Broth
500g Free-Range Chicken Thigh
1 cup Sweet Potato, cubed
2 tsp Ground Turmeric (or fresh if you prefer)
Salt & Pepper, to taste 
2/3 cup Quinoa
1 Zucchini, spiralised 
2 tbsp Parsley, chopped
2 handfuls Spinach

Quinoa Chicken Soup


Method

1.     Heat oil in a large saucepan on medium heat. 

2.     Sauté onion, garlic & ginger for 2 minutes. 

3.     Add carrot and celery to saucepan and cook for a further 2 minutes or until softened.  

4.     Pour in bone broth and bring to a boil, then reduce to a simmer. 

5.     Add quinoa and simmer for 5 minutes. 

6.     Add in chicken, sweet potato, turmeric, salt and pepper and continue to cook for a further 10 minutes.

7.     Using tongs remove chicken and shred with two forks. Once shredded, return to saucepan. 

8.     Stir through zucchini, parsley and spinach and cook until spinach has wilted. 

9.     Serve and enjoy!
