Pumpkin & Sweet Potato Soup

 

I just had to share this creamy soup recipe with you!⁠


One of my favourites & you seriously can never go wrong with a winter warming soup right!?⁠
I like to make a big batch of this and freeze individual portions for future lunches & dinners. ⁠

Pumpkin & Sweet Potato Soup

Servings: 2

Ingredients

1 Onion, diced 
1 Garlic Clove, minced
1 tsp Ground Cumin
½ tsp Ground Coriander 
½ tsp Ground Nutmeg
750ml Chicken Bone Broth (or Vegetable Stock for vego option)
1 kg Pumpkin, peeled & cubed
250g Sweet Potato, peeled & cubed
1 tsp Salt
¼ tsp Pepper 
1 tbsp Parsley 

Method

1.     Heat oil on a medium heat in a large pot. 

2.     Sauté onion & garlic for 1-2 minutes or until fragrant.  

3.     Stir in spices, add broth, pumpkin, sweet potato & salt & pepper. 

4.     Gently simmer for approximately 20 minutes or until vegetables soften. 

5.     Using a stick blender, blitz until smooth.

6.     Stir in parsley and serve.
