Pistachio Slice

I never used to like pistachios (or most nuts for that matter) but WOW I was definitely missing out! ⁠
Pistachios are a great source of nutritious fats, fibre, protein & antioxidants as well as nutrients like Vitamin B6 and Thiamine. ⁠

Servings: 8

Ingredients

Base
¾ cup Raw Pistachios
¼ cup Desiccated Unsweetened Coconut 
2 Medjool Dates, pitted & chopped
2 tsp Extra Virgin Coconut Oil

Filling
¾ cup Raw Pistachios
1 tbsp Coconut Sugar
2 tbsp Extra Virgin Coconut Oil
½ cup Coconut Cream
1 tsp Vanilla Extract 
1/8 tsp Salt

Top
¼ cup Pistachios, roughly chopped
1/3 Shredded Coconut

Method

  1. Blend all base ingredients until combined.

  2. Press evenly into a tin (I used a 21.5cm x 9xcm loaf/slice tin).

  3. Freeze for 15 minutes.

  4. Blend all filling ingredients into a smooth consistency.

  5. Pour over base.

  6. Sprinkle with toppings.

  7. Freeze until firm (approximately 2 hours).

  8. Remove at least 10 minutes prior to serving.
