Natural Mac & Cheese

 

If you buy store bought packets of mac & cheese, STOP right now. 
They are most likely full of artificial colours & flavours and are causing chaos in that gut of yours. 
SO, time to DIY. This recipe is full of VEG but still has delicious pasta & that iconic cheesy flavour.

Servings: 4

Ingredients

½ cup Pulse Pasta
1 Cauliflower (medium sized), cut into florets 
1 1/4 cups Cashews 
1 cup Coconut Cream
2 1/2 tbsp Nutritional Yeast
1 tsp Lemon Juice 
1 tsp Salt
½ cup Water
¼ tsp Cayenne Pepper (optional)
1 Zucchini, grated 

Method

1.     Cook Pasta according to packet and set aside. 

2.     Steam Cauliflower for 5 minutes.

3.     To prepare sauce, blend all remaining ingredients (expect cauliflower, pasta & zucchini) until smooth.

4.     Combine cauliflower, zucchini, pasta and half of the sauce mixture. Place evenly in a baking dish. Pour remaining sauce over the top. 

5.     Bake for 20-25 minutes.
