Natural Chicken Noodle Soup

Our grandma’s were really on to something, chicken noodle soup is exactly the kind of meal you need when you’re sick. ⁠

Homemade Chicken Noodle Soup is full of vitamins and minerals from the veg, hydration from the broth, carbohydrates and satiety from the noodles and collagen & glutamine from the chicken and bone broth which supports the immune system and provides building blocks within the body.

Natural Chicken Noodle Soup

Servings: 2

Ingredients

2 tsp Extra Virgin Olive Oil
½ Leek, finely chopped
1 Garlic Clove, minced
1 Celery Stalk, chopped
1 Carrot, chopped
1 Zucchini, chopped
1 Litre Chicken Bone Broth
½ cup Sweet Potato, cubed
½ tsp Ground Ginger
½ tsp Ground Turmeric
½ tsp Oregano
Salt & Pepper, to taste
200 Free-Range Chicken Thigh
100g Rice Noodles
2 handfuls Spinach

Method

  1. Heat half the amount of oil in a large saucepan on a medium heat.

  2. Add leek, garlic, celery, carrot & zucchini to saucepan. Sauté until softened, approximately 5 minutes. 

  3. Add broth to saucepan. Bring to a boil and reduce to a simmer for 10 minutes. 

  4. Add sweet potato, ginger, turmeric, oregano & seasonings to saucepan. Continue to simmer for a further 15 minutes. 

  5. Meanwhile, heat remaining oil in a separate frying pan. 

  6. Add chicken to pan and cook until cooked through, approximately 5-7 minutes. Set aside & shred with two forks. 

  7. Add rice noodles to saucepan and simmer until cooked through, approximately 5 minutes. 

  8. Stir through shredded chicken & spinach and allow to spinach to wilt, approximately 2 minutes. 

  9. Serve & enjoy!
