Lemon Ricotta & Radish Tart
A zesty colourful tart to brighten your day!

Ingredients
1 x sheet Short Cut Pastry (homemade or good quality
store bought)
1 Free-Range Egg, whisked
½ cup Ricotta Cheese
½ Lemon, juice and zest
4 Snackable Radish’s, sliced into coins
¼ cup Pistachios, finely chopped
Extra Virgin Olive Oil, lightly drizzled
Salt & Pepper, sprinkled
2 Spring Onions, finely sliced
1 tbsp Chives, finely chopped
1 tbsp Fresh Parsley, finely chopped
Method
Preheat oven to 180°C.
Place pastry on a lined baking tray.
Create a pastry border by gently cutting into the pastry to create a rectangular frame 1 centimeter in from the edges (do not slice through to the bottom of the pastry).
Brush pastry with egg until lightly coated.
Bake in the oven for 12 minutes.
Meanwhile, combine ricotta, lemon and chives in a bowl and set aside.
Top pastry with lemon ricotta, radishes, pistachios, olive oil, salt and pepper.
Bake for a further 12 minutes or until pastry is golden.
Sprinkle with spring onion and fresh herbs.
