Lemon & Garlic Prawn Pasta

This delicious flavour combination always goes down a treat.
Pairing zesty lemon with garlic really highlights the beautiful flavour in these wild caught prawns.
A light refreshing meal that is super super simple to whip up!

This recipe features wild caught prawns from my favourite butcher/seafood box delivery service Butcher Crowd .

 
Lemon & Garlic Prawn Pasta
 

Servings: 2

Ingredients

200g Prawns, peeled
½ cup Extra Virgin Olive Oil
½ Lemon, juiced & zested 
2 tbsp Fresh Chives, finely chopped
2 Garlic Cloves, minced
250g Fettuccini 
Parmesan Cheese, to serve

Method

1.     Combine, prawns, half the oil, lemon zest and garlic in a shallow dish and allow to marinate for at least 20 minutes. 

2.     Meanwhile, combine lemon juice, remaining oil and chives in a bowl and set aside. 

3.     Once marinated, cook pasta as per packet instructions. 

4.     Heat a frying pan on a medium heat.

5.     Add prawns and marinade to frying pan and cook until tender, approximately 5 minutes. 

6.     Add sauce and prawns to drained pasta and toss to combine. 

7.     Serve and garnish with parmesan cheese (option to squeeze additional lemon for extra zest!).
