Homemade Muesli Mix

I never thought I’d be so in love with muesli!? I remember as a kid my mum making her own muesli mixes and I would roll my eyes knowing how bland it would taste. GOSH I was wrong!

⁠Muesli can be sooo delicious and of course is so good for you! I love how you can mix it up every time depending on what ingredients you have on hand. I think the gamechanger for muesli for me, was lightly toasting it, oh and of course pairing it with creamy coconut yoghurt!

Homemade Muesli

Servings: 8 (Makes 4 cups or 600g approx. Serving size ½ cup or 75g approx.)

Ingredients

1 cup Rolled Oats 
½ cup Almonds, slivered
½ cup Sunflower Seeds
½ cup Pumpkin Seeds
½ cup Coconut Flakes 
2 tbsp Chia Seeds
1 tsp Cinnamon
½ cup Dried Fruit (oil & preservative free, I used goldenberries)

To Serve:
100g (or 1/3 cup) Unsweetened Coconut/Greek Yoghurt/Milk

Method

1.     Heat a large frying pan and add almonds, sunflower seeds, pumpkin seeds and coconut flakes. Lightly toast until fragrant, approximately 5 minutes.

2.     Combine remaining ingredients in a large bowl and add toasted ingredients. 

3.     Store in an airtight container. 


Hint:
Alternatively, you can use the oven to toast, make sure to use a very low heat and keep a close eye on it.
