Gingerbread Chia Oat Pudding

 

The silly season is always such a busy time of year, breakfast can easily be forgotten or deprioritised.

This is why I love chia oat puddings, because you make them the night before which ensure you have a quick nourishing breakfast waiting for you.

Servings: 1

Ingredients

1/3 cup GF Rolled Oats
2/3 cup Unsweetened Plant-Based Milk (I used Soy Milk)
1 tbsp Chia Seeds
2 tsp Rice Malt Syrup 
¼ tsp Ground Ginger
¼ tsp Cinnamon
Pinch tsp Nutmeg
Pinch of Allspice 

Topping Suggestions:
Pecans, roughly chopped 
Banana
Cinnamon
Cranberries or Goji Berries

Method

1.     Combine all ingredients in a jar (ensure all ingredients are well combined and there isn’t a hard layer at the bottom).

2.     Seal and leave to set in fridge overnight. 

3.     Once set, top with fruit and enjoy!
