Rich GF Chocolate Puddings

 

Talk about an indulgent moment, choc puddings always give me a warm fuzzy feeling and take me straight back to my childhood.

This recipe is in collaboration with the beautiful @ecologyhomewares and features their Ottawa Calico Ramekins, I love how deep they are, making more room for pudding. ⁠

Servings: 10

Ingredients

1½ cup Almond Flour
1/3 cup Coconut Sugar
2 tbsp Cacao Powder
2 tsp Baking Powder
3 Free-Range Eggs, whisked
¾ cup Unsweetened Plant Based Milk (I used soy)
1/3 cup Extra Virgin Coconut Oil, melted
¼ cup Dark Chocolate Chips

Topping:
2 tsp Rice Malt Syrup
2 tsp Cacao Powder
1 cup Boiling Water

Method

  1. Preheat oven to 180 degrees.

  2.     Add almond flour, coconut sugar, cacao powder and baking powder to a mixing bowl. Stir to combine.

  3.   Add eggs, milk, coconut oil and chocolate chips to dry ingredients. Use a whisk to thoroughly combine.

  4. Pour into a four lightly greased ramekins.

  5. Evenly sprinkle cacao powder on top of each ramekin (1/4 tsp to each ramekin).

  6. Evenly drizzle rice malt syrup on top (1/4 tsp to each ramekin).

  7. Gently pour boiling water over the top (1/4 cup to each ramekin).

  8. Bake for 15-20 minutes or until lightly browned. Enjoy!
