Double Choc Banana Bread

Ok, this has got to be one of my FAVE recipes so far!!

This double choc banana bread is going to take your baking to the next level!

I love banana bread, it is the perfect way to use up those bananas you let get a little too ripe (you know the ones), but add some choccy and you’ve got yourself a whole new treat

Try this recipe for yourself, I promise you won’t regret it!!

 
Double choc banana bread
 

Servings: 8

Ingredients

1/3 cup Grass-Fed Unsalted Butter

1/3 cup Coconut Sugar 

3 Bananas (over-ripe are best). mashed

2 Free-Range Eggs, whisked 

1/3 cup Milk (I used unsweetened coconut milk)

1 ¾ cups Flour (I used GF)

1/3 cup Cacao Powder 

½ cup Chocolate Chips 

1 tsp Baking Powder 

½ tsp Bicarb Soda

Pinch Salt

 
 

Method

Preheat oven to 180 degrees and line a loaf tin. 

  1. Using a mixer*, beat the butter and sugar until smooth and creamed.

  2. Add the bananas, eggs and milk and lightly beat until combined. 

  3. Stir through flour, cacao powder, chocolate chips, baking powder, bicarb soda and salt. 

  4. Pour mixture into loaf tin.

  5. Bake for 40-55 minutes or until a skewer comes out clean. 

  6. Remove from tin & cool on wire cake rack.

*if you don’t have a mix master, you can blitz all ingredients (except chocolate chips) in a blender until smooth.
