Creamy French Onion Pasta with Crispy Bacon

I am a BIG French Onion lover. And this is like experiencing pasta like you never have before! Creamy goodness with crispy bacon, I think I’m going to be craving this dinner quite a lot.

Servings: 2

Ingredients

Extra Virgin Olive Oil, drizzled
180g Nitrate Free Streaky Bacon, cut into slices (your desired size)
2 tbsp Grass-Fed Butter
2 Onions, sliced
2 Garlic Cloves
1 cup Mushrooms, sliced
2 tsp Tamari
1 tbsp Thyme
½ tsp Salt
¼ tsp Pepper
3 cups Vegetable Stock or Bone Broth
250g Pasta Penne or Rigatoni
1/3 cup Coconut Cream
1/3 cup Parmesan Cheese
100g Burrata Cheese, optional

 
 

Method

1.     Heat a frying pan and drizzle with olive oil.

2.     Add bacon to pan and cook on both sides until crispy. Set aside.

3.     Meanwhile, add butter to a large saucepan on a medium heat and allow to melt.

4.     Add onion and garlic and cook until browned, approximately 5 minutes.

5.     Add mushrooms and tamari and cook until mushrooms have softened, approximately 3 minutes.

6.     Add thyme, salt and pepper to saucepan and stir through.

7.     Add stock and pasta to pan, bring to a boil and reduce to a simmer (try to submerge as much pasta as possible). Cook pasta for the length of time indicated on the packet, stir pasta frequently whilst cooking.

8.     Reduce saucepan to the lowest heat and add coconut cream, parmesan cheese and crispy bacon. Stir until sauce has slightly thickened.

9.     Serve and top with burrata cheese.
