Carrot Top Pesto Pasta

No pesto jar in the cupboard? Perfect! This easy little recipe is a fantastic
way to use up those leafy carrot tops that would have otherwise been thrown in the bin!
Combined with some basic ingredients and your favourite type of pasta, this is a
fantastic dinner idea for the whole family.

 
Carrot Top Pesto Pasta
 

Servings: 2

Ingredients

250g San Remo Green Pea Pulse Pasta

Pesto (jar & refrigerate any leftover) 
1 x bunch Dutch Carrots Tops (approx. 10 carrots, cut off carrot tops & keep carrots for later use, alternatively use 2 cups basil)
3 tbsp Nutritional Yeast
½ cup Pine Nuts
½ cup Extra Virgin Olive Oil
1 Garlic Clove
½ tsp Salt
¼ tsp Pepper

 
 

Method

1.       Cook pasta as per packet instructions.

2.       Blend all pesto ingredients into a smooth consistency (add more olive oil if necessary for a smoother consistency).

3.       Top pasta with pesto upon serving.

4.       Sprinkle with additional nutritional yeast or parmesan cheese.
