Blueberry Muffins

Okay I have to admit I am slightly obsessed with these muffins. I do love a good blueberry muffin & making them myself is just the best. ⁠
I know that they are full of good quality ingredients & actually have REAL blueberries. 
Who knows what’s in those store bought muffins.

 
Blueberry Muffins
 

Servings: 6 Muffins 

Ingredients

1/4 cup Grass-Fed Butter (or coconut oil)
2 tbsp Coconut Sugar 
1 Free-Range Egg
¼ cup Greek Yoghurt (or coconut yoghurt)
½ tsp Vanilla Extract
1/8 tsp Salt 
1 tsp Baking Powder 
1 ¼ cup Blanched Almond Flour
½ cup Blueberries

Method

1.      Preheat oven to 180 degrees fan forced.

2.     Blend butter & sugar until light & fluffy. 

3.     Add remaining ingredients to blender in the order listed, except blueberries. Blend until combined. 

4.     Divide mixture evenly into a well-greased muffin tin. 

5.     Using a skewer, poke in 4-5 blueberries into each muffin. Gently press remaining blueberries on the top of each muffin.

6.     Bake for 20 minutes or until browned.
