Bbq Chicken Skewers with Grilled Corn Salad

enjoy this tasty marinade!

Bbq Chicken Skewers with Grilled Corn Salad
 

Servings: 2

Ingredients

2 Free Range Chicken Breasts, cut into cubes
½ Lemon, juiced & rind
1 Garlic Clove, minced
1 tbsp Extra Virgin Olive Oil
2 tsp Tamari
2 tsp Balsamic Vinegar
1 tsp Dijon Mustard
½ tsp Dried Basil
¼ tsp Chilli Flakes

Salad
1 Grilled Corn
½ Cucumber, sliced into coins
¼ Red Cabbage, shredded
2 Radishes, sliced into coins
1 Spring Onion, finely sliced

Method

1.     Combine lemon, garlic, olive oil, tamari, balsamic vinegar, Dijon mustard, dried basil and chilli flakes in a bowl. Coat chicken in mixture and skewer. Refrigerate until ready to cook.

2.     Heat oil on a medium frying pan or barbeque. Place skewers and cook until chicken is tender and lightly browned on each side.  

3.     Combine salad ingredients in a bowl and set aside.

4.     Serve skewers sauce alongside the salad.
