Banana Muffins with Vanilla Frosting

Like banana bread but muffin style!

These additive free muffins are easy peasy.
I’ve developed a delicious topping which is quick and easy.
I mean vanilla frosting you are in for a treat…

Anyone else’s favourite flavour vanilla?

 
Banana Muffins
 

Servings: 10

Ingredients

2 Free-Range Eggs
¼ cup Unsweetened Almond Milk
½ cup Sweetener (I used Rapadura Sugar)
3 Bananas (over-ripe are best)
2 cups Oat Flour
1 tsp Baking Powder

Vanilla Frosting
½ tsp Vanilla Extract
½ cup Vanilla Yoghurt (I used coconut vanilla bean)
2/3 cup Vanilla Protein Powder

Method

1.     Preheat oven to 180 degrees.

2.     Blitz all ingredients in a blender until combined and smooth (alternatively hand mix).

3.     Divide mixture between greased muffin trays

4.     Place a sliced banana coin on top of each muffin.

5.     Bake for approximately 30 minutes or until a skewer comes out clean.

6.     Blitz all frosting ingredients in a blender until combined. Spread or pipe on top of each muffin.
