Apple & Raspberry Slice

 

I just adore how this recipe highlights the natural sweetness and colour that fruit produces. ⁠

The texture is delicious and dare I say it.. is almost moist! Trust me this one will go down a treat

Apple & Raspberry Slice

Servings: 10 Squares

Ingredients

Base:
5 Medjool Dates, chopped
¾ cup Almond Meal 
2 Apples, grated
1 Free Range Egg, whisked
½ cup Walnuts, roughly chopped
2 tsp Extra Virgin Coconut Oil, melted
Pinch of Salt

Topping:
½ cup Raspberry (I used frozen)
1 tbsp Cacao Butter
Extra Walnuts to sprinkle on top, roughly chopped

Fruit Slice

Method

1.     Preheat oven to 160 degrees fan forced. 

2.     Combine dates and meal, using fingers to separate chopped dates in a bowl. 

3.     Add all remaining base ingredients & combine until mixed. 

4.     Press into a small loaf tin (I used 9x25cm). 

5.     Bake for 25-30 minutes or until lightly browned. 

6.     In a small saucepan, combine raspberries & cacao butter until smooth. 

7.     Once the base is cooked, leave in tin to cool. Pour over topping, sprinkle extra walnuts and leave to set, approximately 10 minutes. 
Not suitable for freezing, best to store in fridge if a warm day.
